Celebrate the bright, uplifting flavours and fragrances of citrus in this hands-on two-week workshop. Across both sessions, you’ll explore a range of zesty, aromatic creations that are perfect for gifting—or keeping for yourself. You’ll begin by crafting a luxurious lemon salt scrub, learning how to blend natural ingredients into a nourishing, spa-quality exfoliant. Then we’ll move into the kitchen to prepare beautifully candied orange slices and orange rind, starting the multi-day process needed to achieve perfectly translucent, jewel-like results (with the option to dip them in chocolate at a later session). In addition, you’ll make a silky “three-citrus curd” using a blend of lemons, limes, and oranges—cooked gently and bottled to enjoy at home or give as a handmade treat. By the end of the workshop, you’ll have a collection of vibrant citrus delights, new preserving skills, and plenty of fragrant creations to enjoy or share.
Bring a Tea towel and a container(s) for transporting goodies home. An apron if you wish. The cost of all materials/ingredients are vegetarian and are included within your course fee.
With over 30 years of experience as a chef, pastry specialist, recipe developer, food writer and stylist, Tracey brings a rich and diverse culinary background to her teaching. She trained at the Pan Pacific Hotel and AUT before working in pâtisserie, Japanese cuisine, boutique hotels in Switzerland, and hospitality roles across Europe, Australia, and the UK.
